Fall is my favorite time of year, and one reason I like it is because I can start making food that I didn’t make over the hot summer months.  I really prefer cold weather foods like soups, stews, and casseroles.  I like cornbread, rolls, and other things that have to be baked.  I’m definitely enjoying the fall weather and getting back to meals like this:

Chili and gf cornbread are regulars on our dinner table. I have found that I can add just about anything to chili and my kids will eat it, including cauliflower!

We love chili just like everyone else. Joe and I can never eat a whole pan of cornbread, though, so I freeze the leftovers and use it to make croutons when we have certain soups. Cornbread croutons are fabulous with carrot soup and bean soups.

I love fall for exactly the reasons you stated, Linda! It's such a relief to just cook, cook, cook away and not have to think about heating up an already hot house. Chili and cornbread is one of our favorite meals for sure--yours looks great! I don't usually make cornbread just for the two of us, but I make it for my support group a lot. Comforting is a good description for cornbread.

There are some great sounding recipes here already this week! Can't wait to check them out when I get home from the POM festival. :-)

Chili and cornbread is a favorite of ours too. We always make it for Halloween night. Sometimes, if I don't have time to make the cornbread, we'll just use corn chips instead. It's certainly quick and easy!

Your corn bread looks great! That would go well with soup, too. I'm glad that next week is a soup theme. It just so happens that I'm making some now!
